ICED TEA
Iced Tea Brewing Tips
Each of our fine loose-leaf teas can be enjoyed as a cold brew. Notice how their flavours evolve and change when brewed at this lower temperature. Together with just a few drops of our cordial, loose leaf tea makes the perfect summer refreshment. If you are adding ice, make a stronger, thicker brew using up to 5 teaspoons of loose tea per 500ml.
2 GRAMS OF TEA LEAVES / 1.5 - 2 TEASPOONS
500ML OF COLD WATER AT 5ºC
REFRIGERATE FOR 6 HRS FOR A MILD BREW, OR 12 HRS FOR STRONGER TEA
Chai Lemonade
A spiced, citrus refresher for hot summer days...
Ingredients
• Chai tea (East India Co.) 200ml
• Lemon juice 25ml
• Cardamom syrup 5ml
• Ginger Ale (Fever Tree) 120ml
1. Brew 12.5gr of Bombay Chai in 1 litre of hot water at 100C degrees for 4 minutes and transfer to a refrigerated 1 litre plastic store and pour bottle.
2. Pour all the ingredients into the shaker.
3. Fill two thirds of the shaker with ice cubes and shake vigorously.
4. Double strain into a Highball glass and top with Ginger Ale.
Chamomile Mojito
The perfect iced tea to help you relax this summer...
Ingredients
• EIC Chamomile Infusion 70ml
• Fever Tree soda water 100ml
• Lime juice 25ml
• Monin gum syrup 20ml
• Mint 8 leaves
• Chamomile 3 bud
1. Brew 10 grams of Camomile tea in 1 litre of hot water at 85C for 3 minutes and transfer to a 1 litre plastic 'store and pour' bottle in the fridge to chill.
2. Add the mint leaves and sugar to the high ball glass, then the chamomile infusion and lime juice and stir gently.
3. Add the ice cubes, stir in the soda water and top up with crushed ice.
4. Garnish with a mint sprig and Chamomile bud
Tropical Heritage
As uplifting as an island breeze...
Ingredients
• 4 tropical punch herbal pyramid tea bags
• 100ml Hibiscus Cordial
Brew the tropical punch infusion for 5 minutes at 80 degrees in 200ml of water. Then add 700ml of cold water and cordial with ice. Stir well, adjusting to taste. Serve in highball glass with a cherry, lemon curl and a few drops of lemon.
First Romance
A refreshing summer cocktail that’s simply delicious...
Ingredients
• First Romance Tea (East India Co.) 1600ml
• Hibiscus Cordial (East India Co.) 200ml
• Lime juice 120ml
1. Brewing method: 2.0 grams of tea per 200ml of hot water brewed for 3 minutes at 100C degrees. Brew the tea in the bucket, allow to cool, then strain into the ‘store and pour’ 2L plastic bottles using a measuring jug. (More than one batch of tea can be prepared in the bucket at any given time.)
2. Add the cordial and the citrus juice to the tea in the plastic bottle, mix gently and refrigerate.
3. To serve, pour 250ml into an ice cube filled highball glass or takeaway cup, as appropriate.
COCKTAILS
The East India Company Gin Martini
The Martini is regarded by many as the most recognisable and celebrated cocktail in history. It has been continuously developed and has evolved seamlessly, remaining indispensable to any bartender’s arsenal.
We have highlighted the sweet citrus within our Gin and integrated additional subtle depth of flavour and aroma using our own distinctive The East India Company Earl Grey tea tincture.
Ingredients
• 75ml The East India Company London Dry Gin
• 10ml Dry Vermouth
• Garnish: Large orange peel - oils expressed & fresh peel dropped in glass
The East India Company Gin Collins
We have created a refreshing long serve that draws on flavours and aromas from India, ensuring the ingredients compliment the flavour profile of The East India Company London Dry Gin.
Ingredients
• 30ml The East India Company London Dry Gin
• 15ml Green cardamom
• 20ml freshly squeezed lime juice
• Topped with soda water
• Garnish: Kaffir lime leaf & bergamot leaf
Lively and refreshing
The East India Company Gin Negroni
The Negroni has long been a bartender’s favourite and is a perfect demonstration of beautiful simplicity yielding the most incredible results.
Key botanical: Galangal
Traditional serve: equal parts gin - sweet vermouth - Campari
We have developed the spice notes within The East India Company London Dry Gin whilst staying true to the classic Negroni recipe.
Ingredients
• 40ml The East India Company London Dry Gin
• 30ml Sweet Vermouth
• 25ml Campari
• 5ml Homemade galangal liqueur
• Garnish: Orange wedge
The East India Company Gin Sour
The fundamental makeup of the Gin Sour can be traced through a host of classic and contemporary cocktail recipes.
Made well, it is a drink of perfect balance, complexity and depth.
Key botanical: Amchur (dried mango).
Traditional serve: gin - citrus - syrup - egg white (optional).
We have used a delicate pairing of Sauternes and mango to enhance the brighter notes within The East India Company London Dry Gin.
